The blend typically includes 70% Pinot Auxerrois and 30% Pinot Blanc , grown on heavy clay and limestone soils that contribute to its balanced structure and subtle minerality. Production Grapes are hand-harvested and gently pressed. The juice undergoes 12 to 24 hours of settling (débourbage) before fermentation in temperature-controlled stainless steel tanks.
