Production The grapes are sourced from various Chardonnay parcels with an average age of 25 years, planted on clay soils rich with fossilised sea shells. Sustainable viticulture practices are employed, minimising chemical use and favouring tillage over herbicides. Harvest is by hand, and grapes are sorted in the vineyard before being gently pressed whole in small boxes. Fermentation and ageing take place in oak barrels, 55% new, for fifteen months, preserving freshness while adding subtle complexity. Tasting notes The nose is lifted with appealing oak aromas. The palate shows substance and finesse, with creamy textural notes and a subtle savoury mid-palate.
