Winemaking Grapes are hand-harvested in small boxes of 18–20 kg, with meticulous selection of clusters and berries. Cold maceration for 3–5 days at 10–12°C precedes fermentation in stainless steel tanks at 25–28°C with selected yeasts, including delestages and pumping-over to enhance extraction. After fermentation, the wine undergoes 12 months of oak barrel ageing, where malolactic fermentation occurs, followed by stabilization, filtration, and bottling.
