Vineyard & Production Grapes are hand-harvested from high-quality blocks in Casablanca and carefully selected on a sorting table before whole-bunch pressing in a pneumatic press. The must is kept cold on its lees for six days before spontaneous fermentation with native yeasts. After fermentation, the wine rests on lees for nine months: 60% in French barrels, 16% in 2,000-litre French foudres, 15% in concrete ovoids, and 9% in stainless steel, before final blending and bottling.
