Production Fermentation of this Merlot involves a combination of hand-plunging and pump-overs to enhance colour and build tannin structure. After a period of maceration on skins, the wine is gently pressed and transferred to oak barrels for maturation, allowing the fruit to integrate with subtle oak influence and develop depth.
