The Hedonist Shiraz Organic is a richly textured and expressive Shiraz from McLaren Vale, South Australia. Production Grapes are harvested and destemmed in stages from late February to mid-April. Fermentation occurs in open-top fermenters, with a portion of whole berries and a small selection of whole-bunch fruit. Malolactic fermentation and maturation take place over 15 months in a combination of French oak foudres and hogsheads of varying ages. The wine is unfined and unfiltered prior to bottling.
