Viticulture Cooler-than-average South Australian vintages in recent years, with no days exceeding 40°C (104°F), allowed the grapes to ripen slowly and fully develop their flavours while retaining natural freshness and acidity. Winemaking White grapes are harvested early to preserve acidity and achieve lower alcohol levels, with Fiano and Pecorino picked first, followed by aromatic varieties and reds a few weeks later.
