To preserve the bright, pristine fruit profiles, the Syrah , Cinsault , Grenache , and Rolle grapes are harvested during the cool of the night and immediately pressed. The winemaking team utilizes a meticulous selection of the finest juices, followed by a period of cold stabilization on the lees to enrich the aromatic bouquet, before a temperature-controlled fermentation in stainless steel vats.
