Thistledown is all about fun, quality, and approachable wines. Founded by Giles Cooke MW and Fergal Tynan MW, the team works closely with their growers to craft wines that celebrate great fruit, made with love and care. Every bottle is a reflection of their hands-on approach—from bud burst to bottling—and embodies the joy of sharing wine with friends, food, and memorable moments. Viticulture Vines are trellised and spur-pruned, with minimal irrigation to control vigour and occasional shoot thinning to manage yield. Winemaking Grapes are hand-picked, gently de-stemmed and crushed. Greco and Zibibbo varieties are left on skins for 24 hours before separate cool fermentation, followed by maturation on lees to enhance texture and complexity. Tasting Note Cloud Cuckoo Land is a vibrant, textural white wine with expressive aromas of almond blossom, quince, and ripe pear. The palate is tangy, pithy, and almost exotic, delivering a lively and approachable style that embodies Thistledown’s playful spirit and low-intervention ethos.
