Ad Vivum is a project started in 2007 by renowned winemaker Chris Phelps, with a vineyard located in the southwest corner of the Yountville AVA, owned by the Bettinelli family. The Cabernet Sauvignon grapes are selected from two small plots located in the Sleeping Lady vineyard in Napa Valley. Here the vines, oriented from southwest to northeast, enjoy an optimal climatic position thanks to the proximity of the San Pablo Bay which ensures a slow maturation. After the night harvest, fermentation, and a period of maceration on the skins of approximately 3 weeks, the finished wine rests for 20 months in French oak (75% new). Cabernet Sauvignon Ad Vivum has a deep, intense garnet color. On the nose, it reveals an expressive and complex aromatic profile, with initial notes of dark fruit (plum, blueberry, and blackberry) followed by violets and Mediterranean herbs, baking spices, tea leaves, tobacco, and some mineral hints. On the palate, it is full-bodied and balanced, with a creamy texture and a strong acidity. It has a good concentration of fruit flavors, balanced by earthy notes and mineral hints. The tannins are velvety and the finish is long and tasty. It is excellent with lamb chops, meat and mushroom dishes.
