Akashi-Tai Sake Honjozo Tokubetsu. This is a lighter-bodied sake to which the sake master adds a small amount of alcohol prior to the filtering stage. This technique brings out the clean and savoury flavour elicited through the brewing process. This offers a longer and more robust finish. On the nose it is delicate with light notes of lemon, lime and straw. The palate is refreshing with soft citrus and sweet undertones. Produced with Gohyakumangoku rice.
