Cellar for up to 15 years. No need to decant before serving. The Bichot family has a long and storied history in the region of Burgundy, dating back to the 16th century. It wasn’t until 1912, however, that a certain Albert Bichot began making wine under the family name. These days, the winery is in the hands of another Albert Bichot, who oversees a viticultural empire, spanning six separate estates. Domaine Long-Depaquit is the Chablis branch of this empire and one of the best-renowned wineries in the appellation. This wine begins with a smattering of orchard fruit, lemon zest, and white flower aromas. The Chardonnay grows on a bed of red clayish soil, which imparts incredible concentration and richness to the wine. On the palate, the wine coats the tongue in flavours of white peach, grapefruit rind, ripe pear, butter, honeysuckle, and cleansing minerality. The majority of the grapes were aged in stainless steel tanks, with a small portion aged in oak, adding subtle hints of toasted almond. It is a full-bodied wine overall, with good acidity and a zesty character. The finish is long and deeply satisfying. Consider pairing it with seafood, creamy sauce, or roasted poultry.
