Castello Bonomi is a prestigious winery founded by Marino Bonomo in 1985 and located in Lombardy, in the municipality of Coccaglio at the foot of Mount Orfano. Today, the company owns approximately 27 hectares of organically farmed vineyards on limestone-rich soils and rocky substrates. Since 2008, the company has been owned by the Paladin family. This elegant Franciacorta Rosé is produced exclusively with Pinot Noir grapes from the estate's splendid terraced vineyards, located in the southernmost part of the Franciacorta wine region. The harvest is carried out early, and the grapes are quickly brought to the cellar to ensure their freshness and health. After a brief maceration, fermentation takes place at a controlled temperature. After secondary fermentation in the bottle, the wine finally rests on the lees for 30 months. In the glass, the wine reveals a broad, fragrant profile, with notes of red berries mixed with balsamic and spicy hints. On the palate, it is expressive and lively, balanced and ripe, with an elegant fruitiness and a refreshing acidity. It has good structure and a long, aromatic finish. It is very versatile when paired with food: try it with pepper-crusted tuna, tomato tarte tatin, seared salmon, shrimp tempura, or spaghetti with anchovy sauce.
