Catena Zapata Birth of Cabernet 2021 is a powerful and symbolic wine that celebrates the natural crossing of Cabernet Franc and Sauvignon Blanc, giving rise to Cabernet Sauvignon. This cuvée is both a tribute to the grape’s legendary origins and a modern expression of Argentine terroir. Sourced from two exceptional vineyards in Mendoza, the wine combines altitude-driven freshness with depth and structure. It is a refined, age-worthy Cabernet that balances elegance, intensity and precision, reflecting Catena Zapata’s meticulous approach to vineyard selection and winemaking. Meet the Producer Catena Zapata is Argentina’s most influential winery, internationally recognised for its pioneering work in high-altitude viticulture and its role in redefining the global perception of Argentine fine wine. Under the guidance of winemaker Alejandro Vigil, the estate blends scientific research, historical storytelling and terroir expression, creating wines that unite heritage with innovation. Production Grapes are harvested by hand and fermented using a combination of concrete eggs, small stainless-steel tanks and French oak roll-fermenters. Fermentation takes place at temperatures between 26 and 28°C over 12 to 18 days, followed by a total maceration period of approximately 18 to 22 days. The wine is aged for 18 to 24 months in French oak barrels, using a mix of first-, second- and third-use oak to build complexity while preserving fruit purity and balance. Vineyards Fruit is sourced from two distinct sites. The Angélica Sur Vineyard in Paraje El Cepillo, San Carlos, Valle de Uco, sits at an elevation of 1,100 metres on loamy alluvial soils with dense surface gravel, contributing freshness and aromatic lift. The La Pirámide Vineyard in Agrelo, Luján de Cuyo, lies at 950 metres above sea level on alluvial soils with clay topsoil and rounded stones beneath, providing structure, depth and richness.
