Located in the Polkadraai Hills of Stellenbosch, with stunning views over False Bay, De Toren Private Cellars was established by Mr and Mrs den Dulk who moved to this area in 1991 after leaving Johannesburg. The vineyards enjoy the cooling effect of the ocean breezes. Viticulturist Ernest Manuel employs sustainable farming practices throughout the property and takes a holistic approach to keep vineyard soils healthy. Winemaker Albie Koch carries on a simple winemaking philosophy based on gentle and minimal handling, without the use of mechanical pumps. In 2018 Daniel Mueller, Cedric Schweri, Albie Koch, and Cape Estate became the majority owners. Fusion V is the flagship wine of the De Toren Private Cellar company, produced for the first time in 1999 from a Bordeaux blend. The aromatic profile reveals intense notes of ripe red and black berries, especially blackberry and cherry, and then hints of dark chocolate, cedar wood, and a pinch of black pepper. On the palate, the wine is concentrated, dense and complex with soft tannins and a pronounced structure. Its perfect balance and distinctive texture will make a great partner with hearty meat dishes like lamb chops and grilled pork, or aged cheeses.
