Located in the small village of Fleys, Domaine Charly Nicolle is a family-run winery with approximately 26 hectares of vineyards in the Chablis wine region. Chablis Per Aspera is made with Chardonnay grapes selected from the estate's historic vineyards on the right bank of the Serein River in the villages of Chablis, Fleys, Béru, and Chichée. The vines, averaging 35 years old, are rooted in the typical region's clay-limestone soils, with a Kimmeridgian base. After harvesting and spontaneous fermentation at a controlled temperature, the wine remains on the lees in a mix of stainless steel and oak for approximately one year before bottling. Its name is inspired by the Latin motto "per aspera ad astra," which translates as "through the roughness to the stars," and is intended as a tribute to the power of nature and the work of man. In the glass, the wine reveals a beautiful, intense straw yellow color with golden highlights and a broad, elegant aromatic profile with notes of white fruit and wild flowers on a mineral, iodine-rich background. On the palate, it is complex, juicy, harmonious, and rounded, with a smooth texture and a refreshing, well-balanced acidity. The finish is long with a distinctive minerality. It is the perfect wine to pair with oysters and sushi.
