Le Chapitre begins with an aromatic bouquet of sour red cherry, wild raspberry, baking spice, wet soil, and purple flowers. It is a medium-bodied wine, crafted from a mixture of 15- and 75-year-old Pinot Noir vines, exhibiting a rich crimson colour in the glass. It is a delicious, effortlessly drinkable expression of the Marsannay region. The Fourniers are one of the oldest winemaking families in the region, with a recorded history dating back to the 17th century. The winery itself was founded in 1962, by Jean Fournier, and his considerable legacy is carried on by his son, Laurent, who has overseen the estate’s transition to completely organic viticulture. Mouthfuls of fresh strawberry and raspberry explode on the palate, which is marked by a vivacious acidity and fine tannins that lend an elegant structure. It was fermented with whole bunches before being aged in oak barrels for 12 months. There is a strong undercurrent of earth and spice, typical of Burgundy, with subtle hints of gravel minerality, forest floor, and cinnamon. Le Chapitre will be an excellent partner for roast poultry, mushroom risotto, or pungent cheese.
