The company's vineyards span 370 hectares in the Central Valley region, benefiting from a wide variety of soils and a microclimate particularly favorable for quality viticulture, especially for the cultivation of typical Bordeaux grape varieties. The company, now managed by Charles de Bournet, is considered one of the most prestigious in the country, thanks to the extraordinary quality of its wines. The Cabernet Sauvignon grapes are sourced from old vines in Parcelle 8 of the Clos Apalta vineyard in the Apalta Valley. After manual harvesting and temperature-controlled fermentation in French oak vats, the finished wine ages in oak barrels (75% new) for 20 months before bottling unfiltered. In the glass, Parcelle 8 Vieilles Vignes Apalta reveals an intense, deep, dark red color with purple highlights. Its aromatic profile is broad and expressive, with notes of blackberry, blueberry, and black cherry, followed by hints of cedar and spice, with nuances of violet and olive. On the palate, it is powerful and bold, complex and concentrated. It has firm yet silky tannins and a balanced and refreshing acidity. It is rich and balanced, with a full body and a long, layered finish that recalls notes of coffee and spice. It is the ideal wine for a grilled ribeye steak, Moroccan lamb tagine, and aged cheeses.
