Drink it now or cellar for up to 10 years. It is recommended to decant it for an hour. Located in the McLaren Vale wine region of Australia, Mitolo Wines is a winery founded in 1999 by Frank Mitolo with the collaboration of Ben Glaetzer, who left the business in 2020, replaced in production by winemaker Luke Mallaby. The company makes a wide range of white and red wines, including some from Italian grape varieties. As with Mitolo's other wines, the Shiraz grapes come from the southwestern region of McLaren Vale, specifically from the heavy, clay soils of Sellicks Hill. After harvest and vinification, the wine ages for 16 months in a mix of 80% French and 20% American oak barrels. The resulting wine has a rustic character with a strong varietal personality. In the glass, Jester Shiraz reveals a bold, deep burgundy color with bluish-purple highlights. Its aromatic profile is broad and rich, with notes of dark berries and plum, spice, bitter cocoa, and aromatic herbs, followed by hints of olive and soy, clove, and undergrowth. On the palate, it is generous, round, energetic, and full-bodied. It has soft, enveloping tannins, good structure, and excellent balance. It is an excellent value wine that pairs well with grilled lamb chops or hearty red meat stews.
