The Pellegrino family has been producing Marsala in Sicily since 1880, with a legacy rooted in tradition and craftsmanship. The story of Old John begins in 1773, when a Liverpudlian merchant named John Woodhouse landed on the Marsala coast and pioneered the fortification of local wines for export to England. Today, Pellegrino honours this heritage with a range of Marsala wines that reflect the region’s unique terroir and time-honoured techniques. Viticulture The vineyards lie inland of Marsala and Mazara del Vallo, where medium-textured, clay-rich soils provide excellent water retention and mineral balance. Altitudes range from sea level to around 100 metres, with a Mediterranean climate marked by mild winters, limited rainfall, and hot, windy summers—ideal for ripening Grillo, Catarratto, and Inzolia grapes. Winemaking Harvest begins in mid-September, with grapes picked at an advanced stage of ripeness. Fermentation takes place at 20–22°C and is halted by the addition of rectified grape spirit. Cooked grape must is added to enrich the wine’s texture and sweetness. Ageing occurs over 48 months in large oak barrels (80hl and 50hl), with a minimum of 6 months in barrique to enhance complexity and depth. Tasting Note Intense amber in colour. Aromas of apricot and carob, lifted by delicate notes of thyme and black pepper. The palate is full and warm, with flavours of apricot and candied fruit. Food Matching Pairs beautifully with Sicilian pastries featuring ricotta and pastry cream. For a more adventurous pairing, try with brown sugar-frosted quinces wrapped in Sicilian black swine ham.
