Drink it now or cellar for up to 15 years. It is recommended to decant it for an hour. Argentine winery PerSe Wines, founded in 2012, produces mountain wines at around 1,500 meters above sea level in the Gualtallary wine region in the northwest of Mendoza’s Uco Valley. Here, the vines enjoy one of the coolest climates in the country and soils of deep white chalk and decomposed granite. The vineyards are organically farmed (although not certified), and the work in the vineyard and cellar is based on a philosophy of minimal intervention. The Malbec grapes come from vineyards that are about 12 years old. After fermentation in concrete vats with indigenous yeasts and a maceration period of about 40 days, the wine rests for about 14 months in used French oak barrels. Malbec Inseparable is a stylish and intense high-altitude wine that reveals a brilliant and dense purple color and a broad and complex aromatic profile with notes of red and dark fruit, such as cherry and plum, hints of violets, pepper, and lavender. On the palate, it is powerful, juicy and fruity with smooth tannins and a clear mineral vein. It has a long and elegant finish. Its balanced character will make it a perfect companion for lamb chops and barbecued meats.
