Minerality and salinity define this premier cru that could be a grand cru.This wine is perfect with grilled or poached fish, eggs cooked in white wine or goat cheese and salad. Compressed minerality here with a lot of tension and salivating acidity, chalky substances and a long, saline finish. Nothing obvious here. Such a cerebral wine from the old vines of Sechet within Vaillons. A clear yet powerful wine full of tension and a dense, mouthwatering finish. Terrific. Almost irresistible to drink now despite the huge potential for aging. The vines were planted by the great-grandmother of Samuel and are between 90 and 100 years old now. Aged in wine globe. Only four wine globes, about 1000 bottles, as the production in 2024 was just around 10 hectoliters per hectare, and it was the first year that Samuel used wine globe. No oak here. Drink or hold. 10 hl/ha translates into three wine-globes and one barrel. A light lemon tint to the color. The bouquet is very classy, all on those dry stones, with a fantastic precision. Very direct, very linear, almost a tannic touch since the fruit is always so dry here. Good persistence. Makes one salivate! Drink from 2029-2035. TBarrel Sample: 92-95 From vines planted in the 1920s and 1930s, the 2024 Chablis 1er Cru Séchet Vieilles Vignes produced only 10 hectoliters per hectare this year and, given the tiny volume, was vinified in a glass wine globe. It soars from the glass with a bouquet of Granny Smith apple, lemon oil, sage, oyster liquor and spring flowers. On the palate, it is chiseled, displaying exemplary purity, bracing acidity and a strikingly sapid, mouthwatering finish. It is particularly incisive this year, a quality only amplified by the character of the vintage.Barrel Sample: 92-94
