Founded in 1898 by Pietro Sartori, Sartori di Verona is a prestigious company based in Negrar, which produces great Valpolicella wines. After 120 years the winery is today led by Luca and Andrea Sartori, Pietro's great-grandsons. Valpolicella Ripasso Superiore Regolo is a blend of Corvina Veronese, Corvinone, and Rondinella grapes with a small addition of Croatina, coming from selected vineyards in the Valpolicella Classico area. After the harvest, a short maceration on the skins, and fermentation in steel, the wine is passed over the Amarone pomace, according to the traditional Ripasso technique, a process that gives structure and tannic backbone to the wine. The finished wine is then matured in medium and large barrels for a period of 18-24 months. The wine has a bright red color with garnet tones. Its aromatic profile is intense and complex with aromas of ripe red fruit (especially cherry) and berries, followed by notes of sweet spices and some hints of cocoa. On the palate, it has a good structure. It is dense and concentrated, velvety and expressive. The tannins are ripe and silky. The finish is long and pleasantly spicy. Try it with grilled meat and hearty game stews.
