Located in Bannockburn, on the famous Felton Road in New Zealand's Central Otago region, Terra Sancta is a young and renowned winery producing top-quality Pinot Noir from four organically farmed vineyards. The winery embraces a contemporary and unconventional philosophy, using minimal intervention to produce wines that are a pure expression of their terroir. The Pinot Noir grapes are carefully selected from the Shingle Beach vineyard, located 220 meters above sea level above the glacial Kawarau River, on soils composed of glacial shale gravel at the front and limestone at the rear. Here, the high planting density and unique soil and climate conditions favor the production of concentrated and highly balanced wines. After harvest, fermentation takes place in wooden vats (20% new) with indigenous yeasts. In the glass, the wine reveals an expressive and vibrant character. Its aromatic profile is broad and fragrant, with initial fruity notes of raspberry, strawberry, and cherry, followed by hints of aromatic herbs and spices, on a mineral undertone. On the palate, it is soft, round, and lively. It has silky tannins, well-balanced acidity, and a medium body. The finish is long with mineral hints. Try it with porcini mushroom risotto or tuna steak.
