Drink it now or cellar for up to 25 years. It is recommended to decant it for an hour. Vallana is a family winery that has made the history of Alto Piemonte wines over the last two centuries. The company, located in the heart of the Novara hills, is now managed by Francis and Marina Fogarty, the sixth generation of the family, who carry on with care and attention the tradition of the great wines of this area, still little known to the general public. Boca wine, one of the most famous of the company, is a balanced and elegant blend of Nebbiolo, Vespolina, and Uva Rara grapes, fermented in concrete vats. The finished wine is then aged for 3 years, 2 of which in wood and 1 in bottle, before being released onto the market. The result is a full and mature wine with a clear dark garnet color and an intense and clean aromatic profile, with notes of small red fruits and dried flowers, tobacco and mint, and some hints of pepper. On the palate, it is powerful and round, fresh and balanced with soft tannins and a long and elegant finish. It is a wine ready to drink now but also shows great aging potential. For those who do not want to wait, we recommend pairing it with the classic Piedmontese mixed-boiled meats.
