Ca' Vittoria Rosso IGT Puglia Appassimento Gold Release is a rich, full-bodied red from the Salento area of Puglia, southern Italy , crafted from a blend of Negroamaro , Merlot , and Primitivo . Made using the traditional appassimento method, this is a wine of exceptional concentration, depth, and character.
Why You'll Love It
Appassimento is one of Italy's most labour-intensive winemaking techniques, more commonly associated with premium Amarone production. Ca' Vittoria applies this same philosophy to Puglia's finest indigenous varieties, harvesting late into October and allowing the grapes to naturally lose around 50% of their weight and moisture over 15 days. The result is a wine of remarkable richness and complexity that delivers far beyond its price point. Vineyard and Production Grapes are left on the vine longer than usual, harvested as late as October to concentrate sugars and flavours before the appassimento process begins. Over approximately 15 days, the grapes naturally dehydrate, intensifying their aromas and depth. After a meticulous hand harvest, the grapes are pressed and fermented with extended skin contact to extract colour, tannins, and characteristic appassimento richness. The wine is then aged in oak for 3 to 4 months, adding further complexity and a gentle spiced undertone.
