Located in the Paso Robles region of California, Hope Family Wines is a family-owned winery that produces 5 different wine brands that include the Treana range, Liberty School, and Austin. The company, founded in the late 70s, has expanded a lot since then and now collaborates with many winegrowers, especially on the central coast of California. The Austin line is produced in fairly small batches and includes, in addition to Cabernet Sauvignon, Syrah, Grenache, and Roussanne. The Cabernet Sauvignon grapes, harvested in selected vineyards, are fermented separately in stainless steel. Maturation also takes place separately per batch and lasts 11 months in French oak. The blend is then created after tasting the various batches. The result is a pleasant and easy-to-approach wine, but capable of evolving in the cellar for a few years. Austin Hope Cabernet Sauvignon has a beautiful intense color with ruby tones. Its aromatic profile is broad and reveals notes of black cherry and other dark berries and some smoky hints on the finish. On the palate, it is full and balanced, round and concentrated. It has velvety tannins and a good acid vein. The finish is long and pleasant and recalls spicy and coffee notes. Excellent with meat stew with mushrooms.
