Drink it now or cellar for up to 5 years. No need to decant. Founded in 1850, Domaine Jessiaume is located in the town of Santenay in Burgundy. The estate covers approximately 10 hectares of vineyards planted primarily with Pinot Noir and Chardonnay, the region's flagship grape varieties. Once owned by Sir David Murray, one of Scotland's richest men, the domaine was purchased by Dr. Jean-François Le Bigot, who manages it with winemaker William Waterkyhnn. Part of the Chardonnay grapes for this Burgundy wine come from the estate's vineyards, while the rest is sourced from other winemakers. After manual harvesting and whole-bunch pressing, fermentation occurs spontaneously in oak, and the finished wine then ages on the lees in oak (used) for approximately 10 months. The result is a lively and fresh wine with an expressive and broad aromatic profile that reveals notes of tropical fruit and yellow flowers, with hints of lime and almond. On the palate, it is juicy, smooth, and easy to drink. It has a refreshing acidity and a savory, mineral vein that lingers on the finish. It is a youthful and immediate wine that pairs well with seafood, vegetarian recipes, and chicken and also makes an excellent aperitif. For a special treat, try it with a Lobster BLT sandwich.
