Founded in 1590 and managed since 1998 by Jean-François Bordet, Domaine Séguinot Bordet is a Burgundy winery located in Maligny in the Chablis wine district of Burgundy. The estate covers approximately 16 hectares of vineyards and is renowned for its exceptional white wines offering excellent value. This Chablis Premier Cru owes its name to the Chardonnay grapes, grown on a plot in the Vaillons vineyard, one of the most prestigious crus in the appellation. Here, the vines, aged between 40 and 55 years, enjoy a south/southeast exposure and Kimmeridgian soils. After vinification, the wine is aged in stainless steel to enhance the expressive purity of the grape variety and its terroir. In the glass, the wine reveals a brilliant pale golden color with greenish highlights, revealing its youth. Its aromatic profile is lively and elegant, with notes of fragrant summer fruits and a broad bouquet of white flowers, along with a delicate mineral nuance of flint. On the palate, it is fresh, juicy, vibrant, and flavorful, with a well-balanced structure and crisp acidity that refreshes the palate. The finish is long and thirst-quenching, with mineral notes. It is excellent on its own as an aperitif or paired with roasted fish, spaghetti with clams, or scallop risotto.
