Located in Beaune, in the heart of Burgundy, Maison Jaffelin is a French winery now part of the Boisset Group. Winemaking takes place in the prestigious cellars of the 12th-century Notre Dame Chapitre in the historic center of Beaune, and is led by winemaker Marinette Garnier. The Chardonnay grapes come from the Chablis wine region in northern Burgundy, where the Kimmeridgian soils and cool microclimate favor the production of high-quality white wines renowned for their lively acidity and pronounced minerality. After manual harvesting and fermentation in stainless steel, the finished wine ages for nine months in stainless steel to preserve its fresh, crisp character (although occasionally a small portion may mature in large, used oak barrels). In the glass, the wine reveals a clear and brilliant color with pale straw tones and green highlights. Its aromatic profile is fresh and vibrant, with notes of green apple, lemon, and grapefruit, and hints of flint. On the palate, it is lean, citric, lively, and clean, with bright acidity and a distinct minerality. The finish is long and savory. It is the ideal wine for fish and shellfish. It pairs perfectly with sushi, oysters, and steamed white fish. Also worth trying with mushroom omelettes.
