Analivia Sauvignon Blanc is a crisp and expressive white wine produced at the Pagos del Rey winery in Rueda, within the province of Valladolid, Spain. Made from 100% Sauvignon Blanc, an international variety originating from France, this wine has adapted perfectly to the continental climate and high-altitude vineyards of Rueda. Its lively character, fresh fruit aromas, and balanced acidity make it an elegant choice for everyday enjoyment or special occasions. Meet the Producer Pagos del Rey is dedicated to crafting wines that reflect the terroir of the Rueda region, combining modern winemaking techniques with careful vineyard management. The winery focuses on preserving the natural aromatic qualities of each grape variety, producing wines that are expressive, precise, and consistent in quality. Production The Sauvignon Blanc grapes are harvested at dawn in early October, taking advantage of cool night temperatures that help preserve aromatic freshness. After harvest, the juice is left to macerate briefly with the skins to enhance flavour extraction. Fermentation occurs in stainless steel tanks at a controlled temperature of 14–16ºC, ensuring a fresh, clean, and vibrant expression of the variety. The bouquet is aromatic and lively, featuring juicy notes of peaches, mangoes, and papayas, complemented by subtle hints of dried herbs and hay.
