Crocodile’s Lair Chardonnay from Bouchard Finlayson is a refined South African white wine, showcasing elegance, purity, and expressive fruit. Sourced from the high-altitude Crocodile’s Lair vineyard, the grapes ripen slowly, developing vibrant aromatics and complex flavours. Vineyard & Terroir Situated 700 meters above sea level in the Kaaimansgat region, the Crocodile’s Lair vineyard benefits from cool temperatures and extended ripening periods. The stony soils and altitude contribute to the wine’s freshness, minerality, and precise structure. Winemaking Carefully selected grapes undergo gentle fermentation in French oak barrels, with 21% new oak. The wine remains on fermentation lees until blending, without battonage, preserving its purity and natural vibrancy. Malolactic fermentation adds a soft, creamy texture, enhancing the wine’s richness without overpowering its freshness. Tasting Notes Pale gold in colour, Crocodile’s Lair Chardonnay reveals aromas of lime blossom, flint, and subtle rye, with hints of honeyed lemon. On the palate, pear and yellow peach flavours glide effortlessly, complemented by a citrus pith finish. Unctuous yet lively, the wine is beautifully balanced and encourages return sips. Knightor Chardonnay 2023

Think of this Chardonnay from Knightor as a Petit Chablis. It has been gently pressed and fermented entirely in older French barrels, resulting in the oak influence being well balanced and delicate - it then went to be aged in barrel for a further 11 months before being bottled in Spring. Aromas of citrus fruit and creamy oak. The palate shows a delicate touch of oak with notes of vanilla cream.
