The stony soils and altitude contribute to the wine’s freshness, minerality, and precise structure. Winemaking Carefully selected grapes undergo gentle fermentation in French oak barrels, with 21% new oak. The wine remains on fermentation lees until blending, without battonage, preserving its purity and natural vibrancy. Malolactic fermentation adds a soft, creamy texture, enhancing the wine’s richness without overpowering its freshness. Tasting Notes Pale gold in colour, Crocodile’s Lair Chardonnay reveals aromas of lime blossom, flint, and subtle rye, with hints of honeyed lemon.
