Production Grapes are machine harvested, destemmed, and subjected to a short maceration in a pneumatic press. Only the free-run juice (about 60% of the yield) is used. The must is clarified by static decanting before fermentation with selected yeasts at 14–18°C. After fermentation, the wine rests on its lees for several weeks before blending, enhancing texture and complexity.
