Production Fruit is sourced primarily from De Bortoli's own vineyards in the Riverina, as well as long-standing growers who cultivate Botrytis Semillon specifically for the estate. Mino & Co A Grower’s Touch Botrytis Semillon is an elegant dessert wine, crafted to showcase the luscious richness and aromatic complexity that botrytis-affected Semillon can achieve. Vineyard and Terroir The grapes are sourced from carefully selected vineyards where the Semillon vines thrive in well-drained soils and a temperate climate. The conditions encourage the development of noble rot (Botrytis cinerea), which concentrates sugars and flavours naturally in the grape. Viticulture Meticulous vineyard management ensures the grapes are healthy and optimally affected by botrytis. Hand-harvesting takes place in multiple passes to pick only the perfectly shrivelled, botrytised berries. Winemaking The grapes are gently pressed, and fermentation occurs slowly at controlled temperatures to preserve the delicate aromatics.
