Vineyard and Terroir The grapes are sourced from carefully selected vineyards where the Semillon vines thrive in well-drained soils and a temperate climate. The conditions encourage the development of noble rot (Botrytis cinerea), which concentrates sugars and flavours naturally in the grape. Viticulture Meticulous vineyard management ensures the grapes are healthy and optimally affected by botrytis. Hand-harvesting takes place in multiple passes to pick only the perfectly shrivelled, botrytised berries.
