Named in honour of Élisabeth, one of the estate's early muses, this wine captures the warmth and sunshine of the Mediterranean while maintaining the freshness and balance that makes it so easy to love. Viognier is one of the world's most seductive white grapes all apricot, peach, and honeysuckle and this is a beautifully crafted, food-friendly expression of the variety at a very approachable price. Vineyard & Production Grapes are harvested at optimal ripeness during the cool hours of early morning to preserve aromatic freshness. After gentle pressing, the juice undergoes cold settling before fermentation in temperature-controlled stainless steel tanks to retain the delicate floral and stone fruit aromas characteristic of Viognier. A short maturation on fine lees adds roundness and texture to the palate. Tasting Notes Brilliant pale gold in colour. The nose bursts with apricot, peach, and honeysuckle, complemented by subtle citrus zest and a hint of exotic fruit. The palate is rich yet fresh, with a silky texture and vibrant acidity balancing the generous fruit. The finish is long and perfumed, with lingering notes of apricot and orange blossom. Il Casato Sauvignon Blanc Friuli DOC is a refined expression of Friuli’s unique terroir, showcasing the aromatic intensity and freshness typical of Sauvignon Blanc from this northeastern Italian region. Meet the producer Il Casato is committed to producing wines that highlight the varietal purity of each grape while reflecting the soil, climate, and tradition of Friuli. Sustainable vineyard practices and precise winemaking techniques ensure the wines express elegance, balance, and typicity. Production The grapes are harvested in mid-September, destemmed, and gently pressed. A cold maceration is carried out to preserve delicate aromas, followed by fermentation in stainless steel vats at controlled temperatures of 12–14°C. After fermentation, the wine rests in the vats for a period of refinement to enhance its structure and finesse before bottling. Tasting notes The wine displays a greenish-yellow hue with a mineral and aromatic bouquet. Notes of fresh fruit mingle with hints of sage and elderflower.
