Production The grapes are harvested in mid-September, destemmed, and gently pressed. A cold maceration is carried out to preserve delicate aromas, followed by fermentation in stainless steel vats at controlled temperatures of 12–14°C. After fermentation, the wine rests in the vats for a period of refinement to enhance its structure and finesse before bottling. Tasting notes The wine displays a greenish-yellow hue with a mineral and aromatic bouquet. Notes of fresh fruit mingle with hints of sage and elderflower. On the palate, it is rich and elegant, with a long, persistent finish that balances freshness and complexity. Food match Perfect with vegetable dishes, seafood, risotto with mussels, or baked fish.
