Meet the producer Il Casato is committed to producing wines that highlight the varietal purity of each grape while reflecting the soil, climate, and tradition of Friuli. Production The grapes are harvested in mid-September, destemmed, and gently pressed. A cold maceration is carried out to preserve delicate aromas, followed by fermentation in stainless steel vats at controlled temperatures of 12–14°C.
