Il Casato Sauvignon Blanc Friuli DOC is a refined expression of Friuli’s unique terroir, showcasing the aromatic intensity and freshness typical of Sauvignon Blanc from this northeastern Italian region. Meet the producer Il Casato is committed to producing wines that highlight the varietal purity of each grape while reflecting the soil, climate, and tradition of Friuli. Sustainable vineyard practices and precise winemaking techniques ensure the wines express elegance, balance, and typicity. Production The grapes are harvested in mid-September, destemmed, and gently pressed. A cold maceration is carried out to preserve delicate aromas, followed by fermentation in stainless steel vats at controlled temperatures of 12–14°C. After fermentation, the wine rests in the vats for a period of refinement to enhance its structure and finesse before bottling. Tasting notes The wine displays a greenish-yellow hue with a mineral and aromatic bouquet. Notes of fresh fruit mingle with hints of sage and elderflower.
