Their 50 hectares of pristine, chemical-free vineyards sit in a wild, beautiful valley near Saint-Guilhem-le-Désert, and every wine they make reflects that sense of place.

Miss Molly Sparkling Shiraz 2023 from Mollydooker is a playful and celebratory expression of Shiraz from the Langhorne Creek and McLaren Vale regions of Australia. This sparkling Shiraz delights with bright, fine bubbles and a rich spectrum of flavours, perfectly balancing fruit, spice, and subtle oak complexity. Meet the producer Mollydooker is renowned for crafting bold, expressive wines that combine precision vineyard management with innovative winemaking techniques. Each wine reflects the character of the McLaren Vale and Langhorne Creek terroirs while maintaining Mollydooker’s signature style—intense, approachable, and full of personality. Production After fermentation on skins, the wine underwent barrel fermentation to integrate oak flavours. Maturation took place in 100% American oak barrels, with 40% new and 60% one-year-old, allowing the wine to develop depth, texture, and complexity. Malolactic fermentation was applied to enhance smoothness and richness. No fining agents were used. Tasting notes The wine opens with bright, delicate bubbles that bring energy and fun to every sip. Aromas and flavours of cherry and fresh plum dance alongside cocoa and liquorice, while fragrant oak contributes layers of vanilla and complexity. The palate is generous, lively, and full of sparkle, making it a truly festive Shiraz. Food match Enjoy with charcuterie, grilled meats, chocolate desserts, or simply as a joyful aperitif.
