By sourcing fruit from a single, carefully selected parcel within the Davey Estate, winemaker John Davey is able to highlight the unique influence of soil and microclimate on the wine, producing a Shiraz of real depth, complexity, and regional identity. McLaren Vale is one of Australia's great Shiraz regions, and this is a textbook expression of why, rich, structured, and beautifully crafted at a price that over-delivers on quality. Vineyard & Production Fruit is sourced from a single vineyard parcel within the Davey Estate in McLaren Vale, South Australia. Grapes are fermented in open fermenters with controlled pump-overs to gently extract colour and flavour while avoiding bitter tannins. After pressing, the wine is matured for 12 months in oak hogsheads, 10% new, with 70% French oak and 30% American oak, with the balance aged in older French barrels. Individual barrel selection ensures a carefully crafted and harmonious final blend. Tasting Notes Deep red with hints of purple. Intense aromas of blackberry, dark plum and violet, layered with mocha, black pepper and subtle oak. The palate is rich and full-bodied, with fine tannins, balanced acidity and a long, elegant finish that reflects the character of the vineyard and region. This Cabernet Sauvignon Merlot blend from Vergelegen has Claret-like aromas of black and redcurrant fruit, coffee, tobacco, mocha and sexy oak. A pliant, mid-weight wine with noteworthy richness and a firm spine of harmonious acidity to its intense berry and spice flavours. Sourced from north and north-westerly vineyards at Vergelegen, Somerset West, where soil types of granite, Hutton and weathered shale dominate. Vergelegen is indeed a fascinating estate with a rich history! It's not just a winery, but a cultural and historical landmark in South Africa. The estate's origins date back to 1700 when it was first established by Willem Adriaan van der Stel, a Dutch colonial governor.
