A blend of Chardonnay and Roussanne, hand-harvested from meticulously farmed organic and biodynamic blocks, fermented with native yeasts across French barrels, concrete ovoids, foudres, and stainless steel, and aged on lees for nine months — this is a wine of remarkable weight, texture, and seamless complexity. The Casablanca Valley's maritime breezes moderate summer temperatures, allowing grapes to ripen slowly and develop exceptional aromatic intensity. Vineyard & Production Grapes are hand-harvested from high-quality blocks in Casablanca and carefully selected on a sorting table before whole-bunch pressing in a pneumatic press. The must is kept cold on its lees for six days before spontaneous fermentation with native yeasts. After fermentation, the wine rests on lees for nine months: 60% in French barrels, 16% in 2,000-litre French foudres, 15% in concrete ovoids, and 9% in stainless steel, before final blending and bottling. Wakefield Jaraman Chardonnay 2022
' The Taylor family of Wakefield Wines have been crafting fine Australian wine for five decades and over three generations. They are proud members of Australia's First Families of Wine - an organistion that has a combined 1,250 years of unrivalled heritage and iconic wines from families that have shaped Australia's winemaking history. When the Taylor family established their wine business back in 1969, they decided to create a proper 'old world' style estate in the Clare Valley. That's where the name 'Estate' comes from. The Cabernet Sauvignon and Shiraz were the very first wines released and are the heart and soul of the business. In the language of wine, an estate means that the vineyards and winery are in the same location. The inspiration for this came from the great producers of Bordeaux and in particular Chateau Mouton Rothschild who famously were the first to also bottle their wines on the estate. This approach of having ultimate control over the vineyards, winery and even bottling of the wines appealed to the Taylor family. These days the wines are still crafted and bottled on the estate although not all of the fruit is grown there. This is mainly because of the popularity of the wines, but occasionally fruit from other areas is of a higher quality, as is the case for the Pinot Noir and Sauvignon Blanc.
