A tribute to the ‘Farfalla' vineyard in Ballabio and its butterfly shape – from which all the reserve wines originally came – the sparkling Noir Collection Zero Dosage brings out the very best of Oltrepò Pavese's Pinot Noir. Sourced from the predominantly limestone soils of the estate's high-altitude vineyards – established in 1905 on the hills of Casteggio, south of the natural boundary of the River Po – this Blanc de Noir, comprising around 35 per cent reserve wines, is produced using the traditional method. Aged for a minimum of 40 months in the bottle until it reaches its natural balance, it offers on the nose notes of bread crust, camomile and sage, with aromas of white peach, lemon and orange blossom. Straightforward and taut on the palate, it evolves between tangy freshness and a creamy texture, leading to a very persistent finish. A high-quality sparkling wine, which pairs beautifully with a seafood platter or sea bream carpaccio.
