Château Fabre traces its modern history to 1964 when Gabriel Fabre acquired the estate, undertaking a complete replanting of the vineyards and a reconstruction of the winery. Management has since passed to his son, Vincent Fabre, who continues to uphold the family’s commitment to quality and tradition in Bordeaux winemaking. The estate spans 33 hectares, situated partly in Cissac near Pauillac and partly on the plateau of Vertheuil contiguous with Saint-Estèphe, benefiting from diverse gravelly subsoils with clayey limestone and clayey gravel topsoils. Viticulture The vineyards are farmed with the highest sustainable standards, holding Haute Valeur Environnementale Level 3 certification. This holistic programme addresses biodiversity conservation, plant protection, fertiliser management, and water stewardship. The terroir, combined with meticulous vineyard management, allows the grapes to reach optimal ripeness while maintaining balance and elegance.
Winemaking
Harvested grapes are fully destemmed and fermented in modern, temperature-controlled vats suited for fine Bordeaux vinification. The wine undergoes two to three daily pump-overs to extract colour and tannins, followed by a maceration period of four to six weeks. Micro-oxygenation is employed in vat to refine tannin structure and enhance colour intensity. Tasting Note This traditional Bordeaux displays dark ruby hues in its youth, with aeration revealing a complex bouquet of red and blackcurrant fruits, jammy notes, soft spices, and subtle vanilla. The palate is well balanced, supported by soft, approachable tannins, and finishes delicately. With age, the wine develops layered aromas of leather, forest floor, and smoky nuances. Food Matching Pairs beautifully with grilled meats or can be enjoyed after dinner alongside hard cheeses. Technical Details Varieties: Cabernet Sauvignon 58%, Merlot 35%, Others 7%
