Production

The grapes are 100% Nero d'Avola from the estate's certified organic vineyards. Harvested by hand in mid-September, the fruit is carefully sorted and processed immediately upon arrival at the winery to preserve purity. Producing a no-sulphur-added wine requires meticulous hygiene and precision where fermentation is carried out under controlled conditions, with careful pumping over during the early stages. After fermentation, the wine remains on the skins for three to four days to extract gentle structure and flavour before being racked and stored under strict oxygen-free conditions.
