This Albariño is crafted in the Val do Salnés, a premium sub-zone of Rías Baixas renowned for producing some of the finest examples of the variety. The winery works with vineyards located within 8km of the estate, where proximity to the Atlantic Ocean imparts a characteristic saline freshness, while granite soils contribute depth and structure. The wine’s name, El Camarón , reflects both the seafood-friendly nature of the wine and pays tribute to Camarón de la Isla, one of Spain’s greatest flamenco singers. Viticulture The Albariño grapes come from hillside vineyards facing the Ría de Arosa, benefiting from excellent sun exposure and natural ventilation. Vines are trained on traditional south-facing pergolas to maximise leaf area and ripening potential, while raising the grapes off the ground reduces the risk of fungal disease in this humid, wet region. Soils are predominantly granite, decomposed and crumbly at the surface, with rocky outcrops providing excellent drainage. Winemaking The winemaking approach emphasises minimal intervention. Grapes are sorted and gently pressed at ground level before undergoing a short skin maceration. Fermentation occurs in temperature-controlled stainless steel tanks using indigenous yeasts over four weeks. The wine is aged on its lees for two weeks with regular stirring to enhance texture and aromatics. Some vintages see partial malolactic fermentation. The wine is unfined, lightly filtered, and bottled with minimal handling.
