Elegant Spanish sweetness meets spirited Yorkshire character, as the distillery's light and fruity house style matures in ex-Moscatel Sherry Hogsheads.. Whilst sherries like Pedro Ximenez and Oloroso are well known in single malt whisky maturation, Moscatel is much more rare and unusual. Moscatel grapes are known for floral aromas. The grapes thrive in sandy soil and Moscatel vineyards are close to the beaches in the sherry region of Spain – making it a perfect match for our Filey Bay whisky, made here on the Yorkshire Coast.. Soft, Sweet & Fruity with flavours of chocolate dipped orange slices, toasted nuts, caramel, honey and apricot.. This whisky is made using the Spirit of Yorkshire's unique solera-style approach which is, technically, a fractional blending method. Every time Filey Bay Moscatel Sherry Cask is bottled, casks are carefully and incrementally topped up with older casks selected from the warehouse. This keeps the flavour profile consistent, while allowing the whisky to gain age, depth and complexity.. Made from field to bottle with 100% homegrown barley.. About Spirit of Yorkshire Distillery. Being farmers, brewers and distillers, the team are in control of every stage of the growing and distilling process. From choosing the variety of barley and how it is grown, to their unique still configuration, right through to bottling themselves at the distillery.. Their way of farming – using cover crops and direct drilling – is crucial to the future of Filey Bay Whisky. By protecting the structure of the soil and keeping carbon beneath the ground, they're ensuring that the land and the barley are the best they can be.
