Il Vello is a zippy, vibrant Italian White Wine from the hillside vineyards of Abruzzo, within reach of the beautiful Adriatic coast. The name is a nod to 'Pecora', meaning sheep, from which the Pecorino grape takes its name. Produced by Adria Vini, a winemaking venture established in 2003 and jointly owned by Boutinot and Araldica Castelvero, this is a wine of genuine character and refreshing drinkability. Sourced from a longstanding partner in Abruzzo, where the hilly vineyards sit on clay, sand and gravel soils. Fermentation takes place in stainless steel to preserve the variety's natural freshness and aromatic intensity, followed by a short period on fine lees to add texture and depth. Tasting Notes. Fresh and vibrant on the nose with aromas of citrus and white peach. The palate is crisp and mineral-driven, showing bright acidity and a clean, refreshing finish. Perfect Pairings.
