Vineyard & Production

Meticulous vineyard management ensures optimal ripeness and aromatic intensity. Hand-harvested in 20 kg cases, grapes undergo a 6-hour cold maceration at 10°C, followed by gentle pressing. Fermentation occurs naturally in 5,000-litre stainless steel tanks over 2–3 weeks at 16°C. The wine is then aged for six months on its lees in stainless steel, six months in concrete egg, and six months in ceramic tanks.
